No Bake Pumpkin Bites in Three Easy Steps

Three easy steps for a treat has my name all over it! How about you? Make this delicious sweet, guilt-free treat in less than 10 minutes! It's gluten-free, vegan and can easily be nut-free subbing out the coconut flour and coconut shreds.

Great for on-the-go mamas, kids and anyone with a sweet tooth who doesn't want to derail their healthy goals. I quickly made these and shared these with a mama who needed a little lift and left the rest for my husband who, eh um...ate them ALL.

INGREDIENTS
for the bites:

8 dates, pitted, soaked in water for 5 minutes to soften for blender
1/4 cup organic pumpkin puree
3 Tb maple syrup
1 1/2 tsp vanilla extract
3/4 cup rolled gluten free oats + 2 Tb for rolling
1/4 cup coconut flour or whole wheat flour 
1/2 tsp cinnamon
1/2 tsp sea salt

for the coating:
1 Tb sugar 
1 Tb shredded unsweetened coconut (optional) 

DIRECTIONS:

1. Add all of the ingredients for the bites except the 2 Tb of extra oats to your high-speed blender or food processor and blend on high. It will be sticky so you may need to stop the blender and scrape down the sides a few times so the mixture can break down properly. If it's too sticky, add a Tb of almond milk or even water. Remove the mixture placing it into a large bowl. Add the 2 tb of rolled oats and stir thoroughly. 

2. Add the sugar in a shallow bowl. Add the coconut shreds in the same bowl or another bowl if you want to roll half with just sugar and half with just coconut. 

3. Scoop out about a Tb of dough and roll it between your hands before rolling it in the sugar and coconut to coat. Set it aside on a plate and repeat with the remaining dough. 

Store the bites in an airtight container in the fridge. You may also freeze them for a longer period of time.

Makes about 20 bites.
